Long stay visas are usually issued as Single Entry visas. Once you landed in Ireland, register yourself in the GNIB and get the GNIB card, that is the multiple entry visa for you.

CSEP with Stamp1. Unless your fiance goes to Garda and changes the stamp to Stamp4, your fiance will be in Stamp1.

I got it in three months when I applied on this January. Don't worry! Dublin is faster than in India. For stamp 4, they will assess you and check if all the documents are ok in Dublin. You don't really need to fill the to date if you are getting D visa. But if you entered the time, that is ok. As you've just mentioned your WP end date, you don't need to change anything. Don't worry about it.

You can! however, your employer has to give certain details to you. Esp. their current employment ration EU vs Non-EU citizens, their revenue and registration numbers and their P30.

Since your elder son is nearly on age 6, he can join in the 1st standard. Your younger son can join in pre-school as the minimum age to join in the school is 4. Again, it is a common scale and some schools may or may not consider it and it is depending upon the schools.

You can send the 2017 and 2018 P60s and explain to them that you are on the CWSP is from Nov 2017. It won't be a problem

You have to send all the P60s. Since you are in the CSWP, you should have got 30000 or more and it should be reflected on the P60s.

No! as you are on the permanent residency, you don't need to inform anyone. Inform GNIB regarding the address change if you are moving to a different address.
